How were Patatas Bravas created?
The first mentions come from the end of the 19th century and refer to the version of potatoes used by the poorer part of society. This is quite probable because potatoes were the basis of cuisine in almost all of Europe.
One of the theories about their origin, says that this dish has a different origin. It states that this dish comes from a combination of Mexican and Spanish cuisine. Yet, her exact pedigree is unknown. A mention precisely describing this dish served in bars in Madrid dates back to the 1960s.
How to prepare?
Patatas bravas consist of two main elements: potatoes and bravas sauce. Potatoes are often cut into small pieces and fried until golden, making them crispy. Bravas sauce is the key to the whole thing. It is a tomato sauce with a hint of spice, pepper and olive oil, which gives the dish a unique taste.
Depending on the region of Spain, tomatoes or wine are also added to the sauce. Some recipes call for boiling the potatoes, then cutting them into cubes and frying them. But classic patatas bravas are fried raw.
Patatas bravas is so popular in Spain that supermarkets sell ready-made sauces in jars. All you need is to fry the potatoes and combine them with the ready-made sauce.
Actually bravas sauce, it's not that spicy. What gives it this smoked flavor is pimentón, i.e. smoked Spanish peppers. It is quite often found as pimentón picante (hot smoked peppers) and pimentón dulce (sweet smoked peppers).
