In Poland, when we talk about street food, one of the first associations is 'zapiekanki' (plural zapiekanka). It is a local snack that has become an inseparable element of Polish culinary culture. This is a relatively new 'traditional' delicacy available in Poland. Thanks to its simplicity, taste, and short preparation time, it quickly gained recognition from all social groups.
The word 'zapiekanka' has two meanings in Poland. The first is a classic casserole. It can be found in various forms in many other countries. The second meaning is that this is the fast food presented here.
All because in Polish, the word 'zapiekanka' comes from the verb 'zapiekać' - bake. In the case of these two meanings, it is the baking process that connects them. It gives these dishes a unique character.

How was the zapiekanka created?
This Polish fast food appeared in the 1970s with the spread of baguettes. During this period, the Polish communist authorities allowed the development of small enterprises in the catering industry. It was then that many family eateries began to appear. They sold casseroles and other simple dishes of Polish cuisine.
With the restoration of a market economy in the 1990s, the demand for casseroles declined. But they were still served by small catering establishments. They have stood the test of time and competition from large fast-food chains. Some points have even gained cult status.
Originally, the casserole consisted only of an elongated roll stuffed with onions and mushrooms. Another version was to use mushroom stuffing with baked cheese sprinkled on top. It was only later that other ingredients, such as corn or chives, were added. The combination of cheese and mushrooms creates a classic flavor.
Zapiekanka is currently still one of the most frequently chosen options for a quick, tasty meal. This Polish fast food can be found in many small catering outlets. You can probably find them in every city. The casseroles served there often come in at least several different variants (e.g. with meat, olives, or spices).
How do I make a zapiekanka?
Preparing the casserole yourself is very simple and quick. The base is, of course, baguette, mushrooms, and yellow cheese. Place sliced, fried white mushrooms on a piece of bread and sprinkle with grated cheese, which melts under the influence of heat. Hard, ripening yellow cheeses such as Gouda, Edam, and Emmental work best.
You can also diversify the recipe according to your own taste preferences. Add your favorite ingredients or sauces. The presented recipe is a classic, simplest, and most common version that will surely appeal to everyone.
