Ingredients

  • 600 g of tripe
  • 100 g of bacon
  • 5 cloves of garlic
  • 80 g of plain flour
  • 50 g of lard
  • Ground paprika
  • 1 celery root
  • 1 root parsley
  • 2 onions
  • 1 carrot
  • Crushed cumin
  • Marjoram
  • Pepper and salt

Steps

1. Step

To prepare the tripe, start by washing it well and cutting it into smaller chunks. Place it in warm water and bring it to a boil before simmering for 15 minutes. Drain the water and repeat this process two more times. When cooking for the final time, add salt to the water and continue until tender. Once cooked, drain and allow to cool before slicing into noodle-like strips.

2. Step

To make vegetable soup, cook peeled vegetables in reserved broth until soft then remove from heat and blend them. Remember not to discard any leftover broth!

3. Step

To make this dish more friendly, start by cooking the diced bacon in a larger and deeper pan. Then add some lard along with finely chopped onion to the pan. Once the onions turn golden brown, sprinkle flour and ground paprika into it while stirring continuously.

4. Step

Next, pour some broth into your mixture and combine everything before transferring it into a pot for 30 minutes of cooking time. Add garlic that has been squeezed through a press as well as mixed vegetables to your soup once ready; flavor with marjoram, ground cumin, pepper & salt.

Finally, stir prepared tripe pieces directly onto the pot's contents followed by another 20-30 minute cook-time period whilst removing any fat that floats on the surface layering fresh parsley over its top at the result stage just before serving after also being accompanied side-by-side freshly baked bread or other pastries varieties!
