Sorrel soup with potatoes and egg

Rūgštynių sriuba is a sour soup named after sorrel. In this version, pork ribs make the broth, potatoes give it body, and hard-boiled eggs and sour cream are added at serving. Sorrel wilts quickly and changes from bright green to olive as it heats; that colour change is normal.

Documented in a Vilnius cookbook

The 1913 edition of Wincenta Zawadzka's Kucharka litewska contains recipe 31, Zupa ze szczawiu, on printed pages 16-17. It describes a beef broth, optionally enriched with smoked meat, and allows preserved sorrel in winter.

Zawadzka suggests poached eggs, called perduty. The pork, potato and hard-boiled-egg version below is therefore a related home preparation, not a transcription of her recipe. The book documents the broader regional tradition without assigning an exclusive national origin to the dish.

Keep the sorrel until the end

Cook the potatoes until tender before adding the leaves. Stir a little hot broth into the sour cream before mixing it into the soup off the heat, or serve the cream separately.

Wash thoroughly

Lift the leaves out of a bowl of cold water so grit stays behind. Repeat if needed.

Use recognised edible sorrel

Buy culinary sorrel or use plants positively identified as edible; appearance alone is not a reliable identification.

Cool promptly in shallow containers and refrigerate at 4 C or below within 2 hours. Use within 3 days.

Freezing

Freeze the soup without eggs or sour cream if needed; potatoes may soften. Add fresh toppings after reheating.

Ingredients

Substitutions for ingredients:

  • Fresh sorrel - Preserved sorrel can be used; add gradually and check its salt content.
  • Pork broth - Use vegetable broth for a meat-free version. Spinach with lemon is an approximation, not sorrel.

Preparation

1. Make the broth

Cover the ribs with 2 litres water, bring to a simmer and skim. Add the onion and carrots. Simmer gently for about 1 hour, or until the meat is tender.

2. Cook the potatoes

Remove the ribs and onion. Discard the onion; remove the bones carefully and return the meat to the pot. Add the potatoes and simmer for 15-20 minutes until tender.

3. Add sorrel

Slice the washed sorrel and stir it into the soup. Simmer for 2-3 minutes until wilted. Season with salt and pepper.

4. Serve

Remove from the heat. Temper sour cream with a little hot broth before stirring it in, or add it to individual bowls. Serve each portion with one halved hard-boiled egg.
