Zelevi Sarmi (Зелеви Сърми) is one of those dishes that appears very often in Bulgaria. The name simply means cabbage rolls. The cabbage is either pickled or fresh. Inside, there is a stuffing made of rice and meat, or a vegetarian version. The dish is homemade and eaten every day. At the same time, it also appears on holidays. It is especially important during winter and Christmas. That is when sauerkraut is at its best. The taste is distinct but simple. Its simplicity makes the dish accessible to people. That is why practically every Bulgarian knows it. Its popularity stems from its everyday nature. This popularity has led to many regional versions. Some are more meat-based. Others are completely vegetarian.
Similar dishes exist throughout the Balkans. In Serbia and Croatia, they are known as sarma. In Romania, they are called sarmale. In Greece, you can find lahanodolmades. The differences are minor. Usually, the spices and meat proportions change. The idea remains the same. Wrapping the stuffing in a leaf is a common theme. This common theme shows how strong the culinary ties of the region are.
History and origin
The history of зелеви сърми dates back to the Ottoman Empire. It was then that the technique of wrapping stuffing in leaves spread throughout the Balkans. The word sarma comes from Turkish. It means something wrapped. This meaning describes the dish well. In Bulgaria, the dish began to change along with local products. Sauerkraut was easily available in winter. This availability influenced its popularity. Popularity cemented the recipe in tradition. Tradition transferred it to home cooking.
Over time, fasting versions appeared. This was due to Orthodox religious fasts. In these versions, meat was replaced with rice and vegetables. This change did not destroy the dish. On the contrary, it cemented it even more. The dish became universal. It could be served at any time of the year. It could also be suitable for various occasions. Thanks to this, it has survived to this day in almost unchanged form.
